Thanks, Tonya!  thx I love Split Pea Soup and this recipe really sounds  wonderful and so easy to do.  Actually, I may try this one tomorrow.  This colder weather has me wanting soup.   Wink

Ham and Potato Soup (tastes like bacon though)

INGREDIENTS

    * 3 1/2 cups peeled and diced potatoes
    * 1/3 cup diced celery
    * 1/3 cup finely chopped onion
    * 3/4 cup diced cooked ham
    * 3 1/4 cups water
    * 2 tablespoons chicken bouillon granules
    * 1/2 teaspoon salt, or to taste
    * 1 teaspoon ground white or black pepper, or to taste
    * 5 tablespoons butter
    * 5 tablespoons all-purpose flour
    * 2 cups milk

DIRECTIONS

   1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
   2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
   3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Cheeseburger Soup

INGREDIENTS

    * 1 1/2 cups water
    * 2 cups peeled and cubed potatoes
    * 2 carrots, grated
    * 1 small onion, chopped
    * 1/4 cup chopped green bell pepper
    * 1 jalapeno pepper, seeded and minced
    * 1 clove garlic, minced
    * 1/2 teaspoon salt
    * 2 cubes beef bouillon, crumbled
    * 1 pound ground beef
    * 2 1/2 cups milk, divided
    * 3 tablespoons all-purpose flour
    * 1/2 pound processed American cheese, cubed
    * 1/4 teaspoon cayenne pepper

DIRECTIONS

   1. In a large saucepan over medium heat, combine water, potatoes, carrots, onion, bell pepper, jalapeno and garlic. Sprinkle salt and bouillon over the mixture. Bring to a boil, then reduce heat, cover and simmer 15 to 20 minutes, until potatoes are tender.
   2. Meanwhile, in a large skillet over medium heat, cook beef until brown; drain.
   3. Stir cooked beef and 2 cups milk into the soup and heat through. Combine remaining 1/2 cup milk with flour, stirring until smooth; stir into soup. Bring to a low boil and cook, stirring, until thickened, 3 minutes.
   4. Reduce heat to low and stir in cheese until melted. Season with cayenne.

Serves 6

The cheeseburger soup is the only soup my husband will eat without grumbling about it.    He is very anti-soup.

He doesn't really like stews but he does like chili.  He really likes it with all the fixings, wrapped in a tortilla.

That's definitely anti-soup then.  I'm glad he likes the cheeseburger soup.  Has he ever tried the mashed potato soup?  That is a really cool soup to.

What a wonderful recipe, Tonya!  Wow  It sure tasted good on a cold night and I loved it!   yesssss  Actually, I tweaked the recipe just a little bit, but not enough to change the flavor.  I added two small carrots sliced, a rib of celery diced and a some fresh parsley, because I always like add extra vegetables to some of my soups during the winter months. wink5 I've always felt it helps keep me from getting colds.   dunno

I love just having to defrost them on a cold and dreary day lol.  I'm living off of my freezer and loving it at the moment.  Just don't have any desire to cook.  Which is weird for me this time of year.

I made the ham and potato soup the other night and for some reason, I was thinking that it was pureed--so I chopped everything in HUGE chunks.  Adam ate 3 bowls of it and said "Now that's my kind of soup!"  I about fainted!  A soup he likes!!

Sarah, I love my Ham & Potato soup, but I always add quite a bit of the diced ham so it has a lot of flavor and meat in it. Wink  Geesh, now you've got me wishing I was having that for dinner tonight, but I don't have any ham.  smileyNo  Of course, I can always pick some up tomorrow after school. yesssss

Ham hocks are great for soups like that ... Have a great ham flavor and without the big costs!!  ThumbUp

How do you all make your stew? I have NEVER had a complaint in fact my husband hated stew before he met me ... just curious how you make yours and I will tell you how I make mine after  grinnnn

Well, Duh, I decided to pick up my ham last night after school, so I'll be able to make mine tomorrow night.  yesssss  Today was Friday, so I just fixed some breaded shrimp for supper.  Wink

Rita, I'm through with buying ham hocks.  I bought some when I made te Split Pea soup and there was hardly any meat on them.  SmileyFit  It was mostly bone and fat and I've never had them like that before.   smileyNo

I've never bought a ham hock.  What is it?  I'm thinking it's like the bone that is from a ham??

it is like a ham bone .. does not have enough meat to be a Ham but has enough flavor that is good for soups ect.. Not too much different than salt pork.. it is scraps that can still be used..

The ham hock is the leg portion of the ham(skinny end) that is cut off of the ham. It does have tons of flavor, but less meat. Great for seasoning pinto beans and soups! ThumbUp
