I cut a boat load of broccolli today and was wondering if I messed up by freezing it without blanching it first.  SmileyFear My mom says sher never blanches hers and it turns out fine, but several other sites say you should blanch it beforehand. Any ideas??  help

I have done it both ways, and had it turn out fine in stir-fry later.

Well, Tonya, sometimes when I have a lot of broccoli left over from by veggie trays, I will just freeze it without blanching it and it seems to be okay.  wink5  I use it on baked potatoes, in stir-fry and my broccoli casseroles.   yesssss

I froze it without blanching, I hope it is OK.....what I cooked for dinner turned out PERFECT!!! Yahoo It was SOOOOOO good!!

I had steamed broccolli, rice with tomatoes, and ham steaks, Patti. Very little leftovers, everyone loved it!

Geesh, that sounds great, Tonya!  yesssss  I always took it as a compliment when there were very few leftovers because I figured it meant that everyone enjoyed it.   wink5
