Author Topic: Lemon and Herb cream cheese stuffed chicken  (Read 150 times)

I thought I posted this and I guess I didn't
turn oven to 375
1 large oven cooking bag.. I have done it in a casserole dish with a lid as well and it was just as good!
1 4lb roasting chicken
1 and a half cups Cream Cheese
1 Lemon
2 bay leaves
1 tsp Italian seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
In a small bowl mix cream cheese with Italian season garlic and onion powder .. Divide. reserving a half cup of the cream cheese mixture.
with the 1 cup your going to Zest the lemon into it..
Wash and dry chicken.
Slowly and carfully ease the skin of the breast of the chicken till there is a pouch.. ease the 1 cup of the cream cheese under the skin.. try and make it as even as possible.
Place chicken in the roaster bag or pan..
Cut lemon in half and squeeze the juice over the chicken.
Place them along with the 2 bay leaves inside the cavity..
Cook 20 mins per pound + 20 mins.
When done drain the juice from the pan or bag into a small pan .. Removing as much of the grease as possible and whisk  it with the remaining Cream Cheese.. Pour over the top and serve immediately!!
