Once upon a time many years ago Ruby Tuesday had a marinated mushroom that they served on their salad bar that was truely wonderful. Of course they only had it for a short time and now it is gone. It was an oil marinate but that's not saying much. If anyone knows that old recipe I'd love to have it. Not that I'm holding out much hope.

I have marinated raw, white mushrooms in regular Italian dressing with good success. They can be kept in a jar/container in the refrigerator for a couple of weeks because the dressing preserves them. Find a dressing that you really like. Add a clove of garlic if you like garlic.

Tina...that sounds awesome. Next time I'm in Eugene I'll have to grab a bottle of Olive Garden dressing to do this with!
I bet the crimini mushrooms would be wonderful this way, too...yum, yum!

Duh, here's a recipe for marinated mushrooms that is really good.
Marinated Mushrooms
Time: 10 minutes prep.
Ingredients:
4 cups whole mushrooms, cleaned & stems removed
1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons fresh parsley, minced
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon ground pepper
1-1/2 teaspoons Worcestershire sauce
Combine all ingredients to make the marinade, then pour over mushrooms and stir to coat (gently). Cover container and refrigerate overnight. Stir or shake mushrooms occasionally, to ensure contact with marinade.
Note: Sometimes I will just use 1/4 cup olive oil and 1/4 cup vegetable oil because it's a little cheaper that way.

i'm going to try all of these I love marinated mushrooms. Expensive as they are. I'm thinking when I have a place where I can pull it off I might try growing some. You know get one of those kits.

Actually, Duh, when my friend still had her Garden Shop I had thought about doing that because she sold Mushroom Growing Kits there.
After checking it out, it seemed to be more of a novelty item rather than something that would be worth my time and money to bother doing. This kit wasn't cheap either.
It was just a crazy passing thought at the time,
and I'm sure there are kits for people who would really like to grow mushrooms seriously.

I've seen them advertised from time to time. But you are right the kits are expensive too. That's what has stopped me so far. But I have hope.

I guess another thing that stopped me was the kits she had would grow several types of mushrooms, but I was just interested in the plain, old, white ones.
Actually, we got a new Aldi's store here a few years ago and they've really had some good buys on mushrooms, so probably wouldn't even bother with a kit now.
Right before Christmas they were offering the 8 oz. box for only 69 cents!!!

Duh, they done this a lot of the this past year. I probably bought some 10 or 12 times and I don't always see the ad.
Regarding the marinated mushrooms at Ruby Tuesday's, I was wondering what kind of flavors you could you detect?
I only ate there two times and wasn't impressed either time, so I never had them.

I know it was an oil and vinegar marinade I'm pretty sure there was tarragon and garlic in the marinade and either honey or sugar but I'm not sure which. That's about all I can say.

Hey, Duh, why don't you try using the recipe I posted for the Marinated Vegetables in the other thread and just add some Tarragon to taste.
I am not talking about the one I posted above for Marinated Mushrooms because it has much, more distinct taste and it doesn't sound like you're looking for that.

Well, Duh, I guess all you'll have to do is add some red onions with the mushrooms!
I hope you find a marinade that works for you. I love red onions too, especially on a BIG, fat, juicy hamburger!with Kosher spears on the side.
