Candy Apples - HELP

I just saw Sarah's post for Candy Apple Jelly and thought I would ask if anyone had a recipe for "Candy Apples". I'm not talking about caramel apples or the ones with the hard candy shell.
What I'm looking for is a recipe which would make a coating like the "Happy Apples" which they sell in the stores in the fall and around Halloween.
Actually, it's not chewy like caramels and it's not hard like candy, it's just right.
Sometimes they come in red, but most often they are brown. They may sell them by another name in other areas.

Well it sounds good Patti, but I do not think I have ever even seen something in-between the other two types. Hope someone can come up with a good recipe for ya.

Actually, Triss, I don't know if you could call them good, but it's what I've been used to since I was a kid, and I love them.
Do they sell the "Happy Apples" in your area?
They used to cost a dime (long time ago), then a quarter, and now they're almost a dollar each.

I have no idea, I will have to look this fall. I know I have seen some kind of candy/caramel apples but never actually bought one before.
