Tonight was Welsh Rarebit with turkey, bacon and tomatoes.  I had pears with Cottage Cheese on the side.  It was wonderful, but will be 100X better when I have some fresh tomatoes from my garden.  Wink

Well, I was outside for most of the day and it was great!!!  banana02  Actually, I had not given any thought to dinner, but, apparently, my stomach had. ;  Boy, you really gotta love those gas grills.   yesssss   I put on a potato to bake, then two ears of corn ($$$), and finally threw a Ground Round patty on.  I made a tossed salad (from the bag), then added some cheese, fresh sliced mushrooms, croutons and topped it off with Thousand Island dressing.  Wow  Geesh, I can't believe I ever thought I was going to miss all my winter home-cooking when it warmed up.  smileyNo  This was wonderful and all I had to wash was a knife, fork, spoon, plate and salad bowl.  Plus, it's going to get even better when I can add some tomatoes fresh from my garden.   Yahoo

Sarah, when my son was leaving, I asked if he really like the Carbonara and he said he loved it, but thought it could use more sauce.  ScratchHead  Actually, I felt it was a little dry, but since it was so good I didn't question it, but since he brought it up, now, I have a question.  The package of McCormick's I bought was 1.25 oz. and used 3 Tbls. of butter and one cup of milk, so it really didn't make a lot of sauce.  smileyNo  So do you buy a larger package or what would you suggest?  dunno

Today is our anniversary, so I thought that I would make burritos for dinner.  It's one of Adam's all time favorite foods.  I just need to figure out something special for lunch.  PB&J just doesn't seem appropriate. . .

Ohhh soup sounds good.  I think Dan is making chicken pot pies for himself and Patrick.  The lil ones are getting chicken patties, green beans and mac n cheese and I am going to make myself some sausage and potato soup.  Kinda one of those crazy leftovers days.

Sorry, I spoke or wrote too soon, I didn't have my Chicken & Dumplings, but I'm not complaining!   smileyNo  The father of one of my hlgh school classmates died, so I went there before the rush when everyone gets off work.  Well, a lot of my other classmates were there and we decided to go out to dinner.  Hey, what the heck, I figured I could freeze the chicken!  Wink  We went to Lottawatta Creek, so I had Prime Rib (medium rare), Baked Potato, Creamed Spinach and a Caesar Salad.   yay_jump

Tonight is braised balsamic chicken served over rice with super-nasty reviling peas on the side.  I have not made peas since my husband put a whole ton of them on my plate a few months back.  Doesn't it just figure that his favorite veggie is the ONLY veggie on the planet (other than lima beans and chickory or whatever that white acorn looking stuff is) that I will not eat because it is extremely disgusting.   SlapSelf

That talapia sounds really nice, Patches.

Tonight I am fixing for dinner Hot Artichoke and Spinach dip - like what they serve at Applebee's.  I love that dip.  No one has been hungry recently because the weather is starting to bounce off the walls - 80 and sunny one day then 42 and rain the next.  I'm sick of cooking meals that everyone just pushes around their plates!  Adam's brother is also coming over to drop of some stuff, so this will be a good light meal that they can just grab a little at a time.
