4 Boneless skinless chicken breasts
1 cup of ricotta cheese
1 egg
1 chopped onion
3 tablespoons of flour
1 tablespoon of minced basil
1 cup of shredded cheddar cheese

Preheat the oven to 350. Blend the ricotta, cheddar, onion, egg, flour, basil in a medium sized mixing bowl. Butterfly the chicken. Fill the chicken with the ricotta mixture.Season the chicken with garlic (optional). Put in the oven til meat is tender. Serve.

I have made this myself and it was soooo yummy. I got it out of an Agricultar magazine.

Geesh, this sounds absolutely yummy!  Wow  I dearly love ricotta cheese, and I think that's the only reason I eat Manicotti and Lasagna.  Wink
