Its been a long winter and i cant wait for Spring.....So, does anyone have ideas or plans on what they want to Can this year.

I want to try pickles for the first time, so any recipes and tips would be appreciated  Blush...and Jam, i had so much fun making my jam last year, its all gone too, and no one got sick ( so i must have done it right huh  laughmao laughmao).

Come on gals (and guys  Blush)....share those recipes  grinnnn grinnnn grinnnn

I may be scrounging around in here for canning tips. The prices in the stores are soaring in a way they didn't during the last few gas hikes. I don't see myself growing anything this year. But I certainly plan on taking advantage of any seasonal prices.

I am hoping to can tomatoes, salsa, beans, corn, pickles, ummmm....I know there is more, but it is escaping me right now. Prices are so bad, that I can't afford not to can this year....

I plan on doing a little of everything. I already do jams, tomatoes, and some fruits, but, I too will be adding a bunch of new things this year.

I am doubling or tripling up on my salsa this year and I plan on doing jams as well.  This year I plan on strawberry and blueberry for sure along with anything else that sounds good or anything that anyone asks for based on what I did last year.  We are at the bottom of our canned goods here so I cannot wait for fruit to start coming into season.  We are also planning on dehydrating a bunch of fruit and canning quite a bit of whole fruit as well.

I plan on making a ton of Rita's Salsa.  That stuff went fast in this house!  Plus lots of crushed tomatoes.  IF our apricot tree does well (aka no hard frosts from now on) then I will make jam and of course jam on any "right priced" fruit I may find at the store.  And I plan on planting about 25 cuke plants - so I better be ready for pickles and relish.  And I'm going to can up those pepperoncini peppers (like what comes in the box with a Papa Johns Pizza) and I've been requested by hubs and a neighbor to make up some pickled okra with sweet cherry peppers.  I have a suspicion I'm going to need more jars.

I havent made Salsa before., but i should try it, the kids eat lots of it and it can be given as a gift too, good idea!

Penny, salsa is so easy and cans up really well.  I would go for it since you have the hang of canning with your jam last year.

Blanch them first, Penny, though I have heard some people don't. I was taught to blanch, so I do. Make sure you get all of the air out of the bags when you fill them and then just pop them into the freezer...
