Last night was dinner out. The new-ish resort resturaunt here in town offers prime rib, mashed potatoes, veggies, fresh baked bread, soup and salad bar, and a scoop of ice cream for $9.99. Fantastic deal, and amazing food. I think it's going to become our once a week date.
Today I'll be working on putting together a few soups for the freezer, so we will be eating those.

Dianna, they are really good. I guess I would say they are a mild pea? I dunno how to describe it but they do come in pods like peas but are shaped more like lima beans. You just boil the pods and then pop the edamame out and eat them. Some people will put a little soy sauce on them. They are a popular dish with sushi.
Tonight was basic for all the cooking I did today, the kids asked for spaghetti so they got Ragu. No one but Patrick and I wanted pork tacos so it all worked out.

We stopped by Pizza Hut on the way in and picked up a large stuffed crust pepperoni pizza.

We were in WIchita today, so we got Chipolte's. One huge Barbacoa with black beans burrito for me. It was good. Yes, I was a pig and ate the whole thing. It's a good thing that restaurant is over an hour away!

I made spaghetti last night. Ate some, put some in the fridge for lunches during the week, and put the rest in the freezer for another time. I just haven't figured out how to cook for just one yet.. lol
I have a steak I put in the fridge to thaw yesterday that I think will be tonight's dinner. I will have to look at what is in the pantry to find something to go with it.

I made some pizza roll ups for dinner and then ate some of the chocolate covered cherries and cookie dough truffles that I made for a charity bake sale tomorrow.

Oh yum Sarah. I think I could have both of those for dinner! I was going to bake today but ran totally out of time.

If memory serves me right, the chocolate covered cherries brought in $40 (5 dozen, selling at 6/$4) and the cookie dough truffles were the same price but a half dozen more, so $44. I was told they were the first thing gone--Adam had my baskets I sent them in back by 10am and the sale started at 8:30.
I made pork taquitos last night (OMAC--made enough for 3 dinners). After an hour and a half frying up those last night, I vowed to make something easy for dinner tonight. Biscuits and gravy for us. The weather just cooled off (all the sudden) and zapped all my plants. Need to do something with all these tomatoes one of these days...

I decided today was a cooking day. I hadn't planned it to begin with but John had some specific cravings. He needs all of the nutrition he can get right now so cook i will. I purchased a turkey breast precooked yesterday. I boned and skinned it today and amd simmering those up and I sliced up the turkey. We will have turkey gravy on mashed potatoes (John's craving) and hot turkey sandwich (for me). Jonni will go mooch off of friends because she doesn't do turkey. Or she can have a bacon and avocado sandwich because I am cooking up bacon too. I will toss together a large pasta carbonara For other meals this week. I made deviled eggs for John as well. I might bake something as soon as I decide what sounds good. And I have sweet potatoes to bake up so I don't waste oven heat/space. I need soft food ideas for John that might perk up his appetite. He has developed a hiatal hernia. That is why 'soft' is in now.

Pinto beans, rice and ham and mustard greens. Also I have had those soy beans, they remind me of peanuts. I'm gonna try boiling some in salt water and see if they taste like boiled peanuts, YUM!!~

Puddings of course
Jello (only when I'm sick. The rest of the time it doesn't interest me)
Ambrosia

Grits with soft boiled eggs on toast
SOS or hamberger gravy over toast
Liver and onions over rice
pasta in a butter or cream sauce
lasagna
spaghetti with sauce
ravioli
chicken and dumplings
top ramen
That's all I can think of right now.
I'm soaking beans for navy bean soup tomorrow.
Any one have a good southern corn bread recipe. Mine are all locked up by that trojan horse virus grrrh.?

Thank you. I have been banned from cooking liver in the house until John dies. He got very nauseous from three rooms away the last time I sauteed chicken livers. So I will wait on the liver. John is not too hot on pastas. For a guy who says he isn't a picky eater, I have avoided a lot of food items in our menus due to his likes and dislikes. We have done a lot of soups and he is burning out on them. I'm glad he still likes eggs. And the turkey gravy went over well tonight. I have a few more meals of that all made up. I have a house full of yogurt, cottage cheese and puddings for him. And a big bowl of pasta to satisfy my own craving.

Duh- My recipe for cornbread is simple and good!
Here ya go!
Grease a cast iron skillet with crisco(or similar grease) and pre-heat oven to 350.
In a large bowl combine 1 and a half or 2 cups cornmeal, 1 cup(+ or -) self rising flour, and enough powdered milk to cover them. slowly add water until you have a batter slightly thicker than pancake batter. Pour in skillet and bake until edges are nicely browned. Turn oven to broil to brown top. Flip out on a plate or platter and slice. YUMMMM!!!
This is enough to make a BIG pan, but as long as you keep the proportions the same it will be fine. Hope you like it!

We are having vegetable beef soup for supper tonight. I just put the stew beef in the crock pot.
It is a little chilly outside, so I am hoping that will warm me up.

We are using up the leftover baked chicken from last night by having chicken salad, fresh greens(mustards as a bed for the salad) and fresh baked crusty bread.
Tomorrow- Ham hock, pinto beans, and more bread- This stuff is GOOD!!! I'll post the recipe in a sec!

It is basically a ham bone. It is great (and cheap) for flavoring soups. I use them all of the time in my beans.
Dinner tonight was leftovers. A lil of this and that. The next two nights are going to be quick and easy and red meat foods since we will be in turkey and hamville for the rest of the week.
