I thought I'd post some of the recipes my Mom used to make when we were growing up. She was a pretty good cook.
Froggy is my brother. Here's the first-



Our Mom found this recipe in a magazine back around 1974 when meat prices went through the roof and "meatless meals" gained popularity.

Two Cheese Pie

2 C prepared(homemade works best) mashed potatoes
1/2 C grated Sharp Cheddar cheese
1/2 C grated Mozzerella cheese
2 eggs, beaten well
1 tsp dried parsley
Fresh ground black pepper to taste
Garlic Salt
Butter

Mix first 6 ingredients and put in a greased pie pan. Sprinkle with garlic salt and dot with butter. Bake @ 400F for 15-20 minutes until golden brown.
We have added precooked broccoli florets or corn to the mix as well. Let your imagination go with this one.

This one sounds good, almost a variation of twice baked potatoes but way easier.  Going to have to double my mashed potatoes next time to do this with the leftovers.
