I tossed a few frozen chicken thighs into the crockpot this morning with a little garlic powder,  salt and pepper. Thinking I would do something with them later. I never did do much to them. We ate half of them as they were with green beans and baked potatoes. I still have half to shred and eat tomorrow or another meal.

Today is a cooking day. I have a bunch of oatmeal pancakes in the freezer. And 16 twice baked potatoes are freezing now.
I have 3 pounds of lean ground beef browning for future meals. I'm still deciding what I am going to do with it all. I know some is going into a pasta dish for tonight with bacon, peppers, tomatoes and onions. I call this goulash because the lady I learned it from did. But looking up goulash recipes brings me to more stew like dishes. But I love my goulash.

Tonight we had chicken ala Dan.  It was good with a sweet sauce, asparagus, peas, water chestnuts.  I served brown rice tonight mixed 1/2 and 1/2 with white and the kids all ate it.  I did not notice a huge difference other than texture.  Zack asked what is this when he saw it but had two servings.

I was excited it went over so well Tina.  We probably have about 2 weeks worth of white rice left so it will be ease in gently but no more white rice here unless it is for sushi.

Triss, that's great! We use either long grain, wild, or on rare occasion, brown. Brown doesn't store as well, so it's harder to buy in bulk...

I hope the brown stores ok in the fridge cuz that is where I have it.  I did not even see it in bulk when I went to buy it so I will have to look around for more somewhere else.

It should be fine, Triss. I buy 50 pounds of rice at a time, that's why I was concerned about shelf life.

I fixed a BBQ Chicken Salad for dinner.  I've got to say, BBQ Sauce (preferably Curley's Hickory) mixed with Ranch has got to be the awesomest thing ever.  Funny how I'm always surprised by it!

I am cooking a corned beef in the crockpot. I know it is not everyone's favorite around here, but I like it. My family is not so stoked about it either. I will dine tonight and freeze in single meal packs for later on. I may just be cooking something else for the rest of the family. All they have to do is come up with ideas.

It is my goal today to fix up double batches of pizza spirals/rolls, meatloaf, and meatballs.  I'll freeze all of it because it is my attempt to curb Adam's "Let's just order a pizza" impulse.  If I have good food in the freezer, hopefully there will be no more arguing with me.  As for dinner, we'll probably have taco in a bag or cheeseburgers.  It's going to be another beautiful day!

Great plan, Sarah. I keep all the fixings for our favorite pizzas (bbq chicken and pesto ham) in the freezer. When they start lobbying for pizza, I can have it done before the delivery guy would show up.

Tonight will be something with tortallini on the side. Maybe chicken.
