Tonight Lindsay and I are fixing up chicken fajitas, with lots of cheese, avocados ('cause guacamole is grooooosssssss), sour cream, and homemade tortillas. Lindsay and I made a pound cake for dessert and Rachael prepared (almost all by herself) a fresh strawberry sauce/syrup to top each slice of pound cake. I'm ready for dinner now!

Tonight Summer, Mackenna, and their friend Kayla had cheapo frozen pizza and I am having a liver cheese loaf sandwich wth onion, salt and pepper. I was feeling lazy....

Lindsay has chosen to try out Rick Bayless's Tamales for dinner this evening. We're making both a chicken and a pork filling for them. I love tamales and think this should be a great meal for involving the girls in.

Lindsay and I are fixing chiles rellenos and tomates verdes fritos (fried green tomatoes). Depending on how hungry Adam is, we may fix some spanish rice on the side also.

I have one ice cream drumstick left. I think that is dinner for me. We have been eating so differently lately. Few real meals. Jonni had a yogurt and fruit parfait for breakfast and a wilted spinach and bacon salad for lunch. I had pb&j sandwich for brunch and followed it an hour later with a burrito full of good stuff. I had a peach to follow. Sp Ice cream is sounding good and enough for now.

We had Hamburger Helper (cheesy hamburger), fried squash, green beans, and rice for supper tonight. The girls were here to help Grandpa eat the HH so I figured it was a good time to fix it. I don't really care for it...

We had burritos. My mom sent me some awesome anzanzi (I think that is the spelling) beans which have a better flavor than pintos. I also made some green chili verde. Good stuff.

My kids used to fix a dinner that contained mashed potatoes, corn, and green beans with barbecue sauce. They called it Slop...

I have defrosted a half of a meatloaf I made when it was cool enough to turn on my oven without baking the house. I am eating another sandwich. I already had one for lunch and it just tasted like more.

I am solidly in fruit and vegetable mode with a little pasta tossed in sometimes. So steamed vegetables with a garlicky pasta dish. May be all alone but that works for me.

If I ever get around to it, I'm planning to just make up some tuna salad for a sandwich and either tater salad or cole slaw (both of which is already in fridge). Easy no fuss meal.

OK- due to popular demand.....
Glop is hamburger meat browned with some onions(and green bell peppers thrown in when you have them), garlic, any spice that sounds good( I generally use oregano, sage, salt, peppercorn medley, and curry), worcheshire (just a splash), canned tomatoes(or chopped fresh if you have them) served over either mashed taters, rice, or noodles. My kids love it and it takes no time at all, so it works for me! :lmao:
Tonight was chicken casserole with fresh zucchini layered in- SUPER good!

I am so into grab-and-go cold food. The late afternoons are our hottest times of day and to even light a burner on the stovetop feels like it puts the heat index over the top. Today I bought cheese focaccia bread and sliced it open. I chopped some broccoli, carrots, snow peas, mushrooms and olives fairly fine and marinated them in a little Italian dressing. I piled it on the open loaf and piled dry salame and provolone on top of that. I dribbled on a little more dressing on the top side before topping the whole thing and wrapping it. It is in the fridge melding flavors with a plate on top and a weight on the plate. I will turn it over to make sure it gets evenly flattened. Later we will cut it into wedges and eat. Make sure you have a napkin handy in case I put on too much dressing.
