How about some Creamy Scalloped Taters (no cheese).  We love these, especially with some sauted ham and onion mixed in, plus it's super easy to make:

2 lbs. potatoes (about 6 medium)
3 tbsp margerine or butter (better with butter)
3 tbsp flour
1 tsp salt (I rarely use this)
1/4 tsp pepper ( I usually add a bit more)
2 1/2 cups milk
1 small onion finely chopped (about 1/2 cup)
1 tbsp margarine or butter

Peel and wash the potatoes. Cut enough thin slices to measure about 4 cups.

Heat 3 tbsp butter over low heat until melted.  Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling stirring constantly. Boil and stir one minute.

Arrange potatoes in greased 2 quart casserole in 3 layers, topping each layer with 1/2 of the onion and 1/3 of the white sauce.  Cover and cook in 325* oven 40 minutes or in 350* oven 30 minutes. Uncover and cook until potatoes are tender, 60 to 70 minutes longer. Let stand 5 to 10 minutes before serving.

NOTE: When I make this, I use a 9 x 12 glass pan. I normally also saute diced ham and onion and just mix it in with the potatoes, then pour the white sauce over the entire thing.  Not only is this good, but it's twice as good the next day!

OK, now I'm gonna have to make it this weekend..  giggle

Hmmm, I haven't had Scalloped Potatoes in ages so I guess I'll have to try this. Smiley
