I forgot where I got this recipe from but it was in a magazine.
Ingredients:
4 ounces bread, 1/2" cubes
4 ounces pancetta, 1/2" cubes
1 Tbsp. extra-virgin olive oil
black pepper, freshly ground
How to Prepare:
Position a rack in the center of the oven and heat the oven to 375 F.
Spread the bread cubes and pancetta on a rimmed baking sheet, sprinkle with oil and a few grinds of black pepper then toss to combine.
Bake, stirring a few times, until the pancetta is crisp and the bread cubes are golden, about 20 minutes.
Let cool.
Use to compliment soups, stews, or salads.
