My co-workers wife made this for us and shared the recipe.  She is a fantastic cook and anything she has ever made for us was exceptionally good.

Banana Nut Cake

2 - Sticks of BUTTER
½ cup SUGAR
½ cup self rising FLOUR
5 - Eggs
1 -YELLOW CAKE MIX (PUDDING IN THE MIX)
4 - BANANAS (RIPE)
1 - Cup chopped PECANS

Pre-heat oven to 350˚
Cream butter and sugar in mixer
Add other ingredients
Mix well
Pour into greased and floured tube cake pan
Bake at 350˚ for 50 mins.

Let cake rest for 10 mins before removing from pan.
Invert on wire rack to cool.

 licklips Mmmm. That sounds so simple that I might could even handle that. I do have a question, though. What is a tube cake pan? unsure Can you tell I am not much of a baker? Blush

A tube pan bakes fairly tall cakes with a hole in the middle Dianna. Think angel food.

A regular bundt pan may be a little small for this cake, Dianna. But you could fill it about 2/3 and put the rest into cupcakes or something.
I made mine as written except I added some rum. I am going to glaze it with a butter rum frosting.

dianna, tube pans usually have straight, taller sides than a bundt pan.  bundt pans usually have the scallops around it so it comes out "pretty"

that said, some bundt pans are as big as tube pans, usually the older ones.  the newer ones are more shallow.

I added nearly a half cup of rum to the cake. It made it take much longer to cook than the recipe.
BUTTER RUM GLAZE

     1/4 cup butter
     2 tablespoons butter
     6 tablespoons rum
     3/4 cup sugar

To make glaze: Combine all the ingredients in a small heavy-bottomed saucepan; bring to a boil.
Boil the mixture for about 3 minutes, stirring/whisking constantly.
Remove from heat and cool slightly.
Drizzle over cooled cake.
I will add some more chopped pecans sprinkled on top. That mostly lets the no-nuts people know there are nuts involved.

That mostly lets the no-nuts people know there are nuts involved.

My glaze is done just waiting on it to cool a little yet. Do NOT stick your finger in it to see if it is cool enough. It will blister you big time.

Tina, that glaze sounds wonderful!

Also, I think Tina is right.  This is a very tall cake, and would be too much for a regular bundt pan, but I have seen some really large bundt pants that could still work.

No worries.  I don't think you hijacked anything.  No good cook can ever leave a recipe alone.  That's how they get to be such good cooks to begin with!
