Breakfast buffet at night? I like breakfast for dinner.

I went to my daughter's for dinner. Eat and run type of thing, but at least I didn't have to feed myself tonight. Unfortunately, it was pizza again. lol

Yes, it is very odd, Sheri.  Apparently it is some funky KS school tradition.  I've been told they do chili and cinnamon rolls once a month at all the schools during cold weather.  It was really good chili tonight and the cinnamon rolls were also above average.

Oh. My. Gawd.  Sarah.  I'm SO hungry now.  That. just. wow.  Beautiful food.

I have beef in the crockpot right now. And buns ready for some shredded beef sandwiches. I'm just not sure which direction I am going with the seasonings, BBQ or spicy Mexican or maybe oriental? Decisions, decisions....

I bought the most recent Rachael Ray mag about a week again and I have been hungry for these ever since.  Tonight is the night.

Tristen won't either. I always have backups on hand for him.  Just James and I will eat them.  Tristen is happiest with Mac-n-cheese, chicken nuggets, lunchables....you know....junk food. giggle

Those do look good. I think I'd have grilled ham and cheese and put the salad on the side though.

I can't find baby arugula in our local grocery store.  Wonder if I can use baby spinach in its place and just add some pepper?  Any ideas?

That would work, but would lack a bit of the crunch.

Do they sell the mixed baby greens? Something like this?

Then you could pick out the arugula and have the salad another time...

Unfortunately, they don't.  I did look at the ingredients on all the salad mixes to see if any of them had arugula.  Guess that is what I get for trying to shop at a small town grocery.

I made the PW enchiladas yesterday and they were amazing.  I'm a super picky enchilada connoisseur and this is the only recipe I'd make more than once.  Heck, I'm thinking I should make them again tonight!

WOW that is saying a lot Sarah.  Not sure what is on the menu tonight.  Something pretty simple since it is just me and the lil ones.

I ate catfish at Cracker Barrel, with fried apples, macaroni and cheese, hush puppies, and a salad... licklips

Fish is supposed to be healthy for you. Does being fried take away all the health benefits? unsure  That is the only way I will eat fish... wink5

Yes, Dianna, frying it does cancel out most of the health benefits. I like it fried to, but depending on the fish and seasonings, baked fish is good!
