I fixed up mushroom minute steak and some corn on the cob.  Like usual, I over cooked the corn on the cob.  So I glared at it when I wasn't trying to eat it.

Are these the pizza bites that you put a link to last week??  Can you post that link again?  I'm not sure where it is.

Adam is going to be gone for dinner tonight, so I'm the girls and I will just have sandwiches, chips, and a veggie.

I cut string cheese into cubes, and did half with pepperoni, half with ham. Tried pineapple in with ham, but made it harder to close.

Whenever we get pizza I ask James what kid he wants.  He always says anything but pineapple.  He can't stand pineapple on pizza so I know I won't be doing that.  I will do pepperoni.  I wondered how italian sausage would work.  I might try it.

I bet Italian would be great!  I love that.  You could always chop up any veggies really small to make the folding easier.

Oh that looks yummy Sarah.  I do not think that my kids would eat it so spicy but it could easily be tweaked to make it less so.  I am surprised that salsa is the first ingredient to go in the pan though.

Me too, but I have excess milk to use up, and riccotta is easy to make. I'll let you know how it goes.  ThumbUp

Yep, it's really that easy. Whole milk, vinegar, heat. Strain, drain, store. good2

I think using the salsa first is much like using sauce first in a lasagna. It helps keep that bottom layer from sticking and burning. That is what I call a Mexican lasagna. And they are good.

That recipe looks so easy Sarah.   Thanks for the link.  So I would use whole milk for that or half and half?

Just whole milk. Half and half makes the first step of mozzarella instead.

Ahh ok.  Gotta try this when I am feeling better and then make the tortilla bake and some lasagna.

Feeding them to my drop in guests...my house is rarely empty. Right now I have an extra teen, later I'll have a housefull. Mom, and Dad, both will get a couple peppermint patties. Mike and Marissa get the dipped chocolates for valentines, what's left will go to work with Mike on Sunday.

I like the challenge of cooking new things.

To use up the egg whites left from the pots de creme, these are now in the works:

I was just informed one of our friends and his wife are joining us for dinner. That'll take care of someof the extras.
