Johnny has volunteered me to make macaroni salad without celery to take to his sisters.  I've never made it.  Help.

Well, I don't actually have a "recipe" but I can tell you the basics of how I usually make it.
Just boil the macaroni until cooked.  I usually boil a few eggs, maybe 4 or 5 and chop them up too.
Then, I mix the eggs with the macaroni, some salt and pepper, then add in mayonaise until moist.  Macaroni will really soak the mayo so you may have to add more later if it is too dry.  I have also, in the past, added some hot dog mustard to the mayo.  Not a lot, but enough so that mayo looks a little yellow.  It gives the salad a delicious but myserious flavor.  If you put too much, it won't taste as good.  I have also seen frozen green peas added, as well as a can of tuna fish, if you want to give it a little more flavor.  The more things you add, the more mayo you may need to get the right wetness.  Instead of the canned tuna, I have also seen artifical crab used (delicious in this salad).  However, if you decide to just make it simple (macaroni, mayo, eggs, salt, pepper, mustard), it is still very delicious.  Oh, I almost forgot, we sometimes add a few potatos as well.  It adds great flavor, but is not as heavy as a potato salad.

I'm not sure what they're looking for.  Johnny just told me "we don't fix it with peas."  I think someone who knows what they want should make it.  He said it's his sisters favorite thing but she doesn't like it with celery.  So maybe she should make it.

Thanks though.  I guess I'll do the mac, mayo, eggs, salt, pepper, mustard.

sheri, i've made it the way shaman said, but with lettuce, tuna, mayo, and noodles.  i added something else, but can't, for the life of me, figure out what it was.  i know it wasn't celery though.  i hate celery.

I also remembered a few other things.  If I have it in the house, I usually grate a carrot or two and mix it in.  If I have sliced or whole olives, I usually add some in too.  It makes it more interesting to look at, and more tasty too.  I have also made this with spaghetti noodles vs elbow macaroni, and it is still great.  Some people prefer the spaghetti noodles.  The stress of being asked to make something that everybody already knows they like a certain way!  Good luck with that.

I also like to grate or shred some carrot in it sometimes. Wink
