Besides Spaghetti and Mac & Cheese what other meatless meals are there?  You can tell I"m a real meat eater right?  I could use some recipes that don't call for meat.  Especially if they include elbow macaroni.  I bought more than I used and it needs to get used up.

Ginger and I use elbow macaroni, add frozen green peas to the hot mac right after it's drained and stir.  Then add diced cucumbers, diced red peppers, diced onion, a little olive oil, salt, pepper and a dash of salad supreme.  It's nice and fresh on a summer day.  You can eat it a little warm or put it in the fridge for a while.  You can also chunk some cheese or sprinkle Parmesan on it.  I don't like the texture of cold Parmesan though.

veggie lasagna is good, dont have my own recipe.
spaghetti squash with butter and a veggie is good, I like it with broccoli.
Vegetable soup, you could add elbows to that. You can also use elows to make a ziti type meal with spaghetti sauce and cheeses. Either mozzarella & ricotta or even cheddar or swiss.
(dang I'm getting hungry)
Elbows with cheese and tuna is good too.

Beans and elbows is very good and good for you. Just about any beans. I happen to like chili beans. Add any spices, sauces, flavorings you like. They lend themselves to additions well.

I just made a veggie soup but it had chicken broth as the only meat source. You could use veggie stock or make your own very easily.

Scalloped potatoes or potato gratin will do, if you have cheese.

Roasted veggies.

Veggie stir-fry.

Roasted corn with peppers and onions. I love this!
