... a pickled egg recipe? I could go to a gazillion sites and find them BUT I want one that you use and like.
Martons friend whose growing pickle plants for the first time, now wants to make pickled eggs.

My MIL used this one last year....she made a bunch for the family reunion we had, and emailed me the recipe.

Pickled Eggs

Ingredients

12       hard-cooked eggs, peeled   12     
1   cup   each white vinegar and water   250   mL
1   tbsp   sugar   15   mL
2   tsp   pickling spices   10   mL
1   tsp    salt             5 ml

Directions

Divide eggs between two 1-quart (1 L) jars fitted with lids.

In small saucepan, mix together vinegar, water, sugar, pickling spices and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Strain liquid through a cheesecloth, if desired, and pour half of hot vinegar mixture into each jar; cover with lid. Refrigerate for at least 2 days before using.

Pickled eggs will keep one month in the refrigerator.


Suggestions


Always keep a supply of pickled eggs in your refrigerator for a quick, healthy snack.Use pickled eggs to make egg salad or devilled eggs. Slice them for a sandwich filling or chop them to garnish a salad.

To make your own pickling spices use: 1 tsp (5 mL) peppercorns, 10 whole cloves, 1 bay leaf and 2 dried whole chili peppers.

Marton is hoping he'll get into it so much that he'll do the pickles too and give us some!

My pickled eggs are easy. I boil eggs and tuck them into saved pickle juice. Or tuck them right into a half jar of pickles. Just make sure they are covered. If you want them pink and pretty stick a beet in there.
