The chicken cutlets and eggs with roasted red peppers is great. I didn't know if Johnny would like it but he did. A lot.
Today is roast with potatoes, carrots, canned biscuits and slaw.

chicken and rice sounds so good and so does chili lime pork tenderloin. If I go by the store I'll get the stuff for chicken and rice since Johnny may not eat the chili lime pork. If I don't go by the store we'll have mediterrean spaghetti.

I have a chicken breast that I need to cook tonight. I do not have the makings from fried and did the bbq the other night. Anyone have any suggestions that would be easy and tasty. I have a counter top grill, oven and/or toaster oven. My arms aren't going to let me stand over the stove to fry.
I am also planning to make some sweet taters to go with whatever I end up doing with the chicken.

Did you make your chicken breast already? For easy cooking, I bake it with some italian dressing. I bought some marinade from Sam's Club a couple weeks ago and I tried it with chicken last night. It was excellent. It only needs to marinate for 15 minutes. Then I grilled it. James had a leftover breast as a sandwich tonight. Tristen is eating peanut butter and jelly and I haven't eaten yet. Tristen has a concert at school so it was kind of a free for all night.

It's in the oven. I found an odd recipe and decided to try it. Basically coat it in a thin coat of Mayo, season with italian seasonings, roll in mozzarella cheese and bake. Should be done soon. I may have been a bit thick with the mayo....
