tonight it's gonna be pepperoncini beef (in the crock pot already) and stuffed mushrooms.  Should be a tasty dinner.  Maybe rolls and salad on the side...

We went to Olive Garden tonight. licklips I had spaghetti and meatballs and Jim had the mixed grill. I brought leftovers "home". I told Jim he could have a meatball sandwich tomorrow while I finish off the spaghetti and we have some salad, too... grinnnn

Pepperoncini beef is super easy!  Put a roast in the crock pot, cut 3 slits in it and shove a clove of garlic into each.  Then pour a 16 oz jar of pepperoncini peppers over it (juice and peppers) and let it cook on low for 6 hours.  I shred the meat and serve it on toasted bread with cheese (havarti is excellent) on top.

They are about as mild s peppers get but still too spicy for me. If I did this, I would take out something like two of the little peppers and dice them tiny for just a hint of flavor. And my liquid added would be something else.

I would definitely recommend cooking the peppers in with the meat - they add such flavor.  If they are too spicy for you, just don't include them when you make a sandwich.  Pepperoncini are also called banana peppers, Adam and Rachael fight over them when they come in the papa John's pizza boxes.  (this is the only way I'll eat the peppers - I don't care for them plain).

i will probably do it with one banana pepper, a couple sweet peppers, and go from there.  something like pepper steak in the crock pot.
