Busy Brownie

I need some good side dish recipes that are either done on the BBQ, microwave, or stove top.  We just can be using this god-awful oven with the a/c on.  I've got some nice recipes for potatoes, onions, and corn on the cob.  What would you suggest?  ScratchHead

One side dish I really like is Calabacita's... basically is is sauteed zucchini, corn, onions, and mild green chili's.  Many recipes make it into a casserole to be put in the oven but I have done mine more simply either on the stove or wrapped in foil on the BBQ.

Most veggies are good cut into chunks and placed in foil with a bit of butter, salt and pepper and wrapped up then placed on the BBQ.

Pasta/veggie dishes are quick and done on the stovetop. I do a brocolli with small chunks of bacon that is good.

Salad is also a good side with no cooking.

at work, they slice squash and zucchini on the diagonal to make big slices but not lenthwise, and sear them on the grill (char grill, not flat top), then pack them in foil with onions and let them cook.  oh my gosh.  talk about good.  they do that for folks who want vegan sandwich trays, they make good sandwiches.  sometimes they throw large mushrooms sliced in there too.  trying to remember what else i saw on that vegan tray.  but, i'll be seeing it again in july, so i'll let you know wink5

When I had a house full of kids that would eat, I'd keep some kind of salad going all of the time. I made potato or pasta salads that would last a couple of meals or more. In the winter I kept a running cole slaw going. Fresh cut veggies (crudites) will keep between meals in the fridge for a couple of meals too. Summer is a good time for cold foods. I also kept hard boiled eggs around. I only had to prep every third day or so.
Marinate your own foods. Buying pre-marinated  is expensive and you can control the flavors added. You can eat them cold or grill them.

Asian peanut noodle salad and pesto/corn/orzo are my current favorites. Make a big batch, and serve for a few different meals throughout the week.

I double the sauce part if I will be keeping it in the fridge, otherwise the noodles suck it all up. I sub red pepper flakes for the chili oil, and use whatever veggies I have.

I don't know why I no longer like pastas cold. I used to do salads of all kinds with them. But this one looks like it would be just as good or better served warm. I also don't like very hot foods; picky picky in my aging state.

It is good warm, as well. Smiley I'm too impatient to wait for it to cool for the first serving.

The pesto/corn/orzo is good warm, as well...I frequently add bacon and/or chicken.

Cooking just plain old rice on the stovetop Sarah, and you could add some chopped veggies to it, or i cut up a bunch of different veggies, and wrap in tinfoil, and cook on the BBQ.
Some plain pasta noodles, and make your own cheese sauce.

I like to do cucumbers in vinegar for something fast. We like to eat zuchinni, squash and onions sauted in butter. Ive also gotten me a Skillet, Deep Fryer, Toaster Oven to keep the kitchen cool and you can make alot of good dishes out of these 3 appliances. I hate using a stove that just makes me half to wash more dishes!!!

Salsa Rice

1 T vegetable oil
1 onion, chopped
1 cup salsa
2 t chili powder
1 1/4 cups white rice, uncooked
1/2 green pepper, chopped
2 cups water

Heat oil in a deep pan over medium heat.  Saute rice, onion, and green pepper until the rice is browned and onions are soft and almost transparent, stirring frequently. 

Stir in salsa and water.  Season with chili powder.  Bring the rice to a boil, uncovered, at medium heat.  When boiling, turn the heat down to medium low.  When you see holes in the rice, put the lid on tight.  Turn the heat to low and simmer for 15 more minutes.

Spinach Salad

2 lbs spinach, fresh
6 slices bacon
1 T brown sugar

freshly ground black pepper
red wine vinegar
4 lg mushrooms, sliced
2 hard-boiled eggs, diced

Trim spinach of thick stems and damage and wash thoroughly.  Dry

Fry bacon and drain on paper towels.

Add brown sugar to fat stir over low heat until dissolved.  Add vinegar to taste.  A maximum of 1 T vinegar.

Put Sp8inach, mushrooms, and eggs in a salad bowl.  Crumble bacon on top pour warm dressing over the salad.  Toss the salad to coat the leaves.  Season with pepper.  Serve immediately.

Spicy Glazed Carrots

8 medium charrots, sliced diagonally
2 T brown sugar
2 T Worcestershire sauce
1/2 cup satalina dressing
2 T parsley, chopped

Cook carrots in boiling water in medium saucepan until crisp-tender; drain.  Return to saucepan.

Add dressing, sugar and worcestershire sauce; stir until evenly coated.  Cook on low heat 5 minutes or until sugar is completely melted and carrots are evenly coated with the glaze, stirring frequently.  

Sir in parsley and serve.

Cheesy Broccoli Toss

4 c Broccoli florets, frozen
1/2 t Mustard, dry
1/2 c velveeta cheese, cut up
1 T parmesan cheese, grated

Combine broccoli, mustard and velveeta in large non-stick skillet on medium-high heat.

Cook 5 minutes until broccoli is crisp-tender adn hot.  Stirring occasionally.

Sprinkle with parmesan cheese and serve.

I think someone already mentioned gnocchi with pesto.  A starch rather than a veggie really.

Vegetable Primavera

1 c Egg Plant, chopped
1 c Squash, chopped
1 jar spagetti sauce
1 c carrots, chopped
1 c parsnips, chopped
2 1/2 c Cooked Spagetti noodles

Cook spagetti and set aside.  Peel and seed veggies as necessary.  Chop veggies into bit sized pieces.  Mix vegetables and spagetti sauce, cover and simmer until veggies are cooked.  Serve sauce over spagetti noodles.  Sprinkle with cheese.  Great with chicken dishes.
