Simple Sweet and Sour Salad Dressing
1/2 cup olive oil 1/4 cup vinegar 1/4 cup white or brown sugar Chopped mustard greens (I used about 1/2 cup chopped) Chopped onions if desired 1 - 2 tablespoons chopped garlic scapes Add some strawberries or raspberries (I used 4 strawberries)
Blend in a bblender.

It was excellent. James has been asking when I am going to make it again. Will have to do that this week. He went back for thirds of salad the night I made it. He said he never thought he would even go back for seconds of salad.

John discovered raspberry vinaigrette not too long ago. He really liked it for a change from his normal ranch. That is basically what you are making but the mustard greens addition is a new one on me.

I had never used mustard greens before so I thought I would try this recipe out. I don't know what the mustard greens do to it but it is good so I'm not changing it. Unfortunately, I will not have access to mustard greens year round.

I pull mustard greens all year long. They are a very prolific weed here. I have plucked and eaten young ones a few times. Showing my kids how to live off the land. sort of. But they are pretty bitter. Look for them frozen in your grocery store, Jessica. You may luck out. I have seen them here.

I would look up how to freeze spinach and follow those directions. It is probably either just freeze or blanch and freeze. Just make sure you freeze in increments that you will need to use so it doesn't turn into a gigantic ice cube.

I just read to blanch, dry and freeze. I think I will try that with some of it.

I have eaten them mixed with other salad greens because we got a lot of mustard greens weekly. That has stopped but I'm we will get more in the fall.
