ingredients:
chicken - i use either boneless skinless breasts or thighs
rice krispies - the walmart brand is as good as the kellogs brand. the ones in the box, not the ones in the bag.
a stick or more of melted butter - i use real, salted butter, normally land'o lakes or walmart brand, which ever is on sale.

slightly crush the rice crispies.  i use about 2 cups if we are all eating.  about a cup or cup and a half if just scott, matthew, and i.  put them in a freezer bag and squish with your hands or use a rolling pin. don't pulverize or crush them super fine.  defeats the purpose of the "crispy"

dip the chicken in the butter, then roll the chicken in the rice krispies.  put in a shallow baking pan.  when all the chicken is done, pour the remaining butter on the chicken and then the rice crispies over the top.  this keeps the chicken moist.  even chicken fingers come out moist.

bake at 350* for 45 minutes or so.  i check for doneness at 40 minutes and watch from there.

now, here's the beautiful part of this.  i make it in my toaster oven and it is great.  no heating of the oven, the pan that came with the toaster oven is the right size for the 3 of us, and cleans easily.  during the winter, if you use the big oven, it is really good with baked beans and baked scalloped potatoes. put them all in the oven at the same time and relax while dinner cooks itself.

low fat, low cholesterol, and one of the few ways i can eat rice.

ok, only low fat if you don't scoop the butter and dropped crispies out of the pan and put them on the top of your potatoes like i do giggle

well, you have to thank scott for telling me about it 26 years ago.

his mother made it and i had never heard of it.  so i called, got the recipe over the phone, and it has been a family staple since.  it's fast, easy, and comforting.  and gives you crunch that is healthy.

I have done it this way. I have also added some more spice to my chicken before coating because I find it a little bland.
It is much like the good old corn flake baked chicken recipes of the 50's. And that is good too.
I do not like shake n' bake (in spite of living here).

That is a common name for California. Have you never heard it?
The corn flake recipe is similar and one of the reasons you can find cornflakes already crumbed in the baking aisle of most groceries. But I believe the chicken is dipped in milk before coating with a little butter poured over after. I will have to look.

I don't even use much ricotta in mine. It is not a favorite part of lasagna for me.

Ricotta is one thing, I would have never thought to use cottage cheese... just the thought sounds Yuck!

oh, i though we had told matthew that story.  and matthew being the chef he is, we were on the way home the other day and talked about mom having been an ok cook but scott soon learned...

and i said "yeah, cottage cheese in lasagna".  i though matthew was going to come unglued!

mom uses cottage cheese instead of ricotta and doesn't even put it in the food processor or blender first razberry

and scott, you are lying.  you had just never had good lasagna until you had mine.

tina, i mix the ricotta with sauce to thin it out a bit sometimes, i think it is better that way.

I typically make my lasagna with ricotta cheese but have used cottage cheese before.  I like it both ways.
