I got a large frying pan from my cousin. It was his camping pan and was very grody on the outside with grease and smoke/creosote. I don't mind my own ick, but I know where it comes from. I took a drill with a wire brush attachment to that and got it cleaned to 'new' and re-seasoned with my own stuff.

If they look bad, take them in the backyard, build a nice campfire and chuck them in it. I've stripped many that way...then just start over with the seasoning. Once you get them up and going, wash then plunk on a hot burner to dry...when the water is gone, rub with oil and turn the burner off. Let them cool in place.

I have several smaller ones since that time that have been condemned to my wood stove for a while. All of the crumby stuff cooks right of inside there in a short time.
And that is the way I always wash and dry mine, stovetop to dry. Unless my oven is still hot.

My first cast iron skillet was found in the back yard of the house my first husband and I had when digging to put in a small garden. He liked to try telling me that some old lady used it to get rid of her hubby. Why else would it be burried so deep. ha ha.
It took surprisingly little to clean it up and season it so it was usable.

back to the steaks, i make beef and mushrooms with brown flour gravey a lot. it is a favorite of ours.

sarah, i usually use something along the lines of top round, or sirloin. or stew beef. not chuck. chuck makes good pot roasts though.
