Every year we go to my friends field for a summer party campout. Past few years someone made a corn dish with a creamy hot pepper sauce. Well this year I found out who it was and got the recipe!  BigGrin

4 cans corn (you could use fresh or frozen if you prefer)
1 stick, (1/4 lb) butter
1 package of cream cheese
1/2 jar jalapenos, chopped
'some' roasted red sweet peppers, more for color than anything, chopped.

Heat it all up together and tada! YUM!

I didn't ask if you should drain the cans of corn or not. So I guess I'd drain but keep the liquid and see if the sauce needed more liquid or not. I'm assuming drain cause frozen or fresh doesn't come with 'juice'.

That sounds good. I'd need a milder pepper for mine. Jalapenos are just too much for me. But I bet they would work well.

kate makes this.  she drains her corn, or uses cream corn.  it is good if mild or pepperless.
