Un-Fried Green Tomatoes with Tomato Gravy


Preheat oven to 400°.  Place your baking sheet in the oven while it is preheating.

Slice green tomatoes.  Place in a single layer on paper towels and cover with a layer of paper towels.

Mix equal parts corn meal and flour.  I was making 2 large tomatoes and used 1/2 cup corn meal and 1/2 cup of flour.  Mix in 1 tsp. sugar, 1 tsp. salt and 1 tsp. black pepper.  Dip each tomato slice into milk, making sure to coat both sides and then dip into flour and corn meal mixture.  Press down to be sure that it is thorougly coated.  Flip it over and coat the other side.  Spray your baking sheet with olive oil spray and place the tomatoes on the baking sheet in a single layer.  Spray olive oil spray on the tops of the tomatoes.  Bake for 40 minutes, flipping them after 20 min.

While the tomatoes are baking, make your tomato gravy.  Heat 2 or 3 tbsp. of olive oil in a pan.  Add a diced onion to hot oil.  Cook for 5 mins.  Add chopped up mushrooms.  I used a small package of mushrooms.  Cook for a few minutes until both are wilted and browned.  While that is cooking, chop up some tomatoes.  I used 2 good sized tomatoes.  Add them to the mushrooms and onions.  Simmer, stirring occasionally.  When your green tomatoes are done, this should be done also.  Season to taste with salt and pepper.  You want to cook off most of the liquid so make sure to give this enough time to simmer.

Like I said, I have never had fried green tomatoes so I have nothing to compare these to but they were really good.  We had chicken with it and we put the tomato gravy over the chicken too.  It was yummy!
