Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies
1 cup shortening
3 cups sugar
2 eggs
5 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla
2 tsp. baking powder
1 large can pumpkin (or 2 small cans)
1 pkg. chocolate chips
Mix all ingredients together, drop by teaspoonful on greased cookie sheet. Bake at 350 degrees for 12 - 15 minutes.

Yes. They are definitely cake texture. This recipe didn't say it but I saw others that said to either eat warm out of the oven or refrigerate. I have some in the fridge to see how they taste cold. I might do that with all of them.

Yes, when you use fruit or vegetables in a cookie you usually refrigerate. Aren't you glad you have a new fridge?

Yes I sure am!
This made 96 cookies!! I am glad it made a lot because I am taking most of them to a hayride on Saturday. If I was making them just for us, that would be too much. I guess you could always freeze some. Or cut this recipe in half.

They are kind of addicting. And really not overly sweet. Tristen had 2. I have had 3. James will probably have 4 when he gets home from hunting.

I would eat 3 of a NORMAL cookie! An addicting one I'd say, "I ate 8 of these in one sitting" and it'd really would have been closer a dozen!

I should say that they are 2 or 3 bite cookies so 96 might not seem like so much. Don't get me wrong, it still is a lot but they are not full size cookies.
