Italian Wedding Soup



I read a bunch of recipe for this one and adapted it to suit my own needs.  I did not measure anything at all and just kind of tossed it together but it turned out great!

In a large soup pan, sauté onions, garlic, celery, salt, pepper and Italian spices in a splash of olive oil.  Add in peeled and sliced carrots, frozen meatballs, and a bag of chopped spinach.  Cover this with chicken broth and simmer.   

Boil water for pasta and cook any type of pasta to al dente.  Add to soup before serving.  Top each bowl with Parmesan cheese.

That looks lovely, Triss.
How did the kids like it? I cannot find frozen meatballs that don't have a bunch of fillers in them like soy extenders and things. I end up making my own .

I will be making my own from now on since I know that we like it but it was good to use up the meatballs we had that my in laws brought over.  The kids did not like the spinach but they all ate it so that is good especially since I will be making it again.

Other then the meatballs and spinach, i have everything to make it......looks like i will be making a trip to the store this weekend.

I gave the recipe to a friend along with a bowl of the soup.  Her whole family loved it and will be making it again, as will I.

I made it again with Wal-mart italian meatballs...yuck.  So from now on it's homemade meatballs.  Boy I sure am pick-y.
