I started a sourdough starter last week and finally got it ready to be able to bake bread... feeding it morning and night for a week...

My first attempt...  I caught my starter at the end of its rise and the dough did not rise well.  It was not very sour as a result but the kids liked it.  The texture and consistency was pretty much right on though.


My 2nd attempt... I caught the starter at the top of its cycle and let the dough rise overnight.  I only let this one rise once and we have not tried it yet cuz it just came out of the oven.

We are not very happy with the taste of the bread... it is good but it is not sour enough.  I need to try a different recipe next week.

I don't want to burst your bubble but the wild yeast you are cultivating may not give you the sour dough taste that you get from San Francisco Sour Dough.  The wild yeast down here where I am makes a very pour sour dough.  I have heard from a friend that there is a company that produces the San Francisco wild yeast and sells it for making sour dough bread.  You may want to look into seeing if you can find it.

I killed my starter... It is ok though, we were never super happy with it and we have sever other go to's that we like so much more.

We love bread here and especially homemade bread.  I probably make bread of some sort 1-3 times a week.

I love homemade bread but rarely make it.  Probably because the results vary a great deal.
