I made chicken patties a while back and really just winged it... you could do the same for bites... I just put the chicken in the food processor and added in bread crumbs, spices, a couple of eggs and a bunch of cheese.  Shaped them and then fried them up.  Froze them and reheated as they were needed.

Barb, I have been making my own chicken nuggets.  I cut the chicken into nugget sizes.  Dipped it in melted butter and then in a mixture of bread crumbs  (I used panko once and regular once...they liked the panko better), parmesan cheese and italian seasoning.  Bake at 350 for about 20 minutes turning halfway through.  I put a cooling rack on top of a cookie sheet and put them on the cooling rack.  That way they didn't sit in any grease that may have formed in the bottom of the pan.  I hope all that makes sense.

i just finished eating mine.Yummmmmmmmm
I found racheal ray , Buffalo popcorn chicken bites.
Didnt do it like hers,
But put my own ingred an made a batter an it stayed on beautiful.
I actually liked it .......

Didnt use her spices or dressing .....
