Ok this one is for the brave... and those not afraid of just tossing stuff in and knowing it will work out.

Take 1 cup hot water and add to that 2 TBSP of yeast and 2 TBPS of sugar... give it 10 minutes to foam up and then add in warmed up leftover mashed potatoes, a couple of shakes of salt and a dribble of olive oil.  Mix together and then add in enough flour to make a dough that you can work with but that is not too stiff.  Once the dough is kneaded, separate into the appropriate number of bread pans which depends on how many leftover mashed potatoes you have.  Let rise for 1 hour and then bake at 350 for about 50 minutes or until top is browned and when you tap the brad it sounds a bit hollow. 

This bread is a perfect way to get rid of leftover mashed potatoes and is an excellent sandwich bread.

I made a batch with some instant mashed potatoes and it worked out really well too.

I would have to do the same.  I usually turn left over potatoes into potato pancakes.  But I'll definitely try this.

I saw a bunch of different recipes and just adapted.  I had a lot more mashed potatoes the first time and that is why I just winged it.  This last time I used instant.  We always seem to have leftover potatoes and the kids ate this bread up.  It makes great french toast too.
