We've always fried potatoes and now I feel very superior to you guys.
I peel, thin slice, then fry in my electric frying pan with the oil already hot. My pan is non stick but they will stick if you don't turn them. I use a spatula and slip them like you would a pancake. I salt while cooking and when finished cooking. I never thought about releasing steam or starch or anything like that. I can't remember ever having them burn. It takes between 30 and 45 minutes depending how many potatoes are in the pan. I am feeling superior. I think I'll go get my crown and wear it for a while.

Sheri, did you mean to say take of the tiara and put on the Big Crown? 'Cause I doubt you've been walking around without anything on your head....
I was actually using frozen hashbrowns and they kicked my butt. I don't think the oil was hot enough, I don't think I maintained the right temp, and I'm thinking I stirred them way to much. But they kept sticking!!
Tonight I am fixing ranch chicken (it looks really, really good and was SO easy), skillet asparagus, and lil smokies. The smokies were staring at me in the fridge and kept saying "eat me! eat me! you know you want too" so I felt obligated to include them with our dinner.

I had to go back and find Tammy's post, I don't know how I managed to miss it! That is a great way to make the potatoes, about how long do you leave the potatoes in the pan? Just a few minutes?
The ranch chicken was really, really, really good tonight. I'm not usually a fan of baked chicken. Posting the recipe just in case you guys are interested in it.

The potatoes are already done when they come out of the microwave so the only reason to add them to the pan is to coat them with the seasoned oil and to mix them with the peppers and onions. Depending on how brown you want them would depend on the time you wanted to leave them in the pan. Not more than a minute or two for me. The paparika gives them plently of color for me.
I'm always looking for a quick way to cook the foods I really like.

It's to hot to do this but I've got a steak defrosted so you know I'm going to have it for dinner. I may eat in the bedroom to make up for heating up the house with the stove.

Last night we went out to a sub place called Jimmy Johns. The bread was good (although limited to just 2 choices), the meat was good too but only dressing choices were mayo or Grey Poupon. Which left, to me, the sandwiches a bit plain and "eh"-ish.
Tonight it's broiled Parmesan tilapia and green beans.

Avocado might be a very good addition to it without having to put on dressing, Jessica! Are you talking sliced avocados or some sort of avocado spread - guacamole stuff?
tonight I'm fixing Parmesan Tilapia. It's going in the oven and I pulled out the fresh green beans and they were not suitable for eating, darn it! Now I'm looking for an emergency in-less-than-ten-minutes-with-what-i-have-on-hand side dish.

I'm just not a guac fan. Smashed/sliced avocado is good though!
Dianna, I'm terrified of Thai food. Once, I made this horrible, horrible peanut-tofu-peanut butter noodly dish that was the most revolting thing I've ever served myself or my family. It was vile. I tried really hard to eat it and couldn't. The kids picked off the peanuts, only Adam, poor lone Adam, ate everything on his plate. (He quietly asked me to please never make that again) To this day, I can not think of Thai food without that aroma filtering into my nose and my stomach tensing. Yuck!
