I haven't had the southern style so I don't know what that is like but the cornbread here in the north is kind of a cake like texture and is sweet.

in my experience, there are about 4 kinds of cornbread.  first is not really corn bread but "cracklin bread" which is corn bread with bits of bacon or other fried (hard) pork bits.  originally, the bits were the bits of meat left when they cooked the lard out of the fresh pork...

then there is "sweet" corn bread which is what jiffy mix is.  not quite cake textured, but good with a glass of milk or in lima beans or field peas.  

next is the stuff you mix up with corn meal and flour an egg and enough milk to make it not quite pourable.  

finally there is cornbread with "stuff" in it.  some folks add jalepenos, onions, or whole kernel corn.  and i've actually seen all 3 added.  cracklin bread does not fall in this category.  

all of it is always better cooked in a well seasoned cast iron skillet.  growing up, if it was cooked on top of the stove in the skillet (on low heat) it was a "corn pone" instead of "corn bread".  i don't like the onion and/or jalepeno bread.  although right now, that is very popular.

We went to the farmers market today to get butter lettuce.  The lettuce had already sold out and was gone so we got okra and some grass fed steaks.  The fried okra was great.  Grass fed beef, which is better for me, sure tastes different than force fed corn beef.  It was tender and juicy but does taste different.

Yes, beef fed different things tastes different than corn fed.
I'm thinking tonight it will be grilled ham and cheese and something fresh and green with tomatoes on the side.

I finally made my grilled ham and cheese tonight. I wanted them the other night but it was still too hot to cook much. And heat is also suppressing my appetite a bit these days. Coller today and even better tomorrow.
