airy Scones

Wonderful scones.  Very airy just as advertised.  Here is the recipe.

1 1/2 cups cake flour
1 Tbsp baking powder
1 Tbsp Sugar
1/2 tsp Salt
4 Tbsp Butter
1 cup whipping cream
1 med egg yolk

Preheat 375F

Line a cookie sheet with parchment paper.

In a large bowl sift together flour, baking powder, sugar, and salt.

With an electric mixer, work the butter into the flour until the mixture is mealy.

Add the cream and egg mix on low speed until the dough is smooth.

Bake for 9 to 13 minutes.  (it won't get very brown at all.)

Serve immediately with butter yummy.

I had to substitute margarine for the butter and light cool whip and milk for the whipped cream but it still worked great.  I ate 4 of the 6 right out of the oven.  I couldn't help myself.
