Georgia Peanut Soup

Georgia Peanut Soup

Makes 4 servings

Embellish each serving with about a tablespoon of chopped peanuts on the top, if desired.

3 cups chicken broth
1/4 cup finely chopped celery (1 Tbsp celery seeds)
1/4 tsp salt
1 small onion, finely chopped
2 Tbsp Margarine or butter
1/2 cup peanut butter
1 cup milk or half-and-half (powdered milk is ok)
2 Tbsp cornstarch dissolved in 1/4 cup water

Combine chicken stock, celery, salt, onion, margarine, and peanut buttter in a slow cooker. Cover and cook on HIGH 2 to 3 hours. Add milk or half-and half and cornstarch mixture. Cover and cook on HIGH 15 to 20 minutes or until slightly thickened, stirring several times. Serve Hot.

I've got to remember to double this recipe.  They wanted more and so did I and I didn't have anymore.  It's incredible how good this recipe is.
