What stuffing is accompanying your Bird?

I normally do a regular bread stuffing.  But, I'm thinking about changing things up somewhat.  So I'd love some ideas.  It still has to work with my leftover Turkey, Mayo, Cranberry, Stuffing, Sandwiches.

I made green apple and onion stuffing one year that I saw on Rachael Ray and it was HORRIBLE.  Bread stuffing is the best!!!

Sausage Stuffing sounds good.  I think I might go that way this year. 

I remember when I tried the cherry and cranberry sauce recipe.  Boy was I disappointed.  Of course I never know if it is the recipe or me that is the problem. 

I'm doing an apple and nut stuffing for the pork chops here thursday night.  That should get me in the stuffing mood for turkey day.

I have never had a cornbread stuffing that I liked. I like bread based stuffing.

i make my "corn bread stuffing" half corn bread and half white or wheat bread (whatever ended up in the freezer stale).  if you don't put at least half white bread in the stuffing, the corn bread turns to mush.  in my humble opinion.  that said, i do prefer my cornbread dressing to my bread stuffing.

Jenn you hit the nail on the head.  The cornbread stuffings I have had have been mushy.  Mixing it will some type of wheat bread should make all the difference.  Now you've got me thinking i should try one of those. 

Now for the big important question.  Which dressing would work best with the Thanksgiving Leftover Sandwich?  You know the one with mayo, stuffing, turkey, and cranberries in it.  So yum!

i use the cornbread/white bread mix that i eat.  when you refrigerate it, it slices very nicely.  if you skip the boiled eggs, it freezes into those slices perfectly and microwaves well.  i've eaten on a pan of dressing out of the freezer for up to 4 months... (i was the only one who wanted it)

I would love to have the recipe.  Did you really need to ask?  lol. 

A dressing that slices well would be a real boon when it comes to the leftover sandwiches.
