Freezing Bread Dough

I'm so departmentalized sometimes I scare myself. I'm pretty sure I've finally figured out all the steps for making bread. Now comes the next question. If I want to freeze some of the dough rather than making up 3 dozen rolls all at once when and how do I do it? Thank you ahead of time for your experience.

As little air as possible. So wrapped in saran wrap before bagging. That will help keep out freezer burn.
Or in increments where you will be most happy defrosting. You can make your rolls and put them on parchment lined cookie sheet and when they are frozen bag those. And just defrost the amount you want.

duh, that is a great idea to make a bunch then freeze for later. I'd have homemade rolls every day if Johnny would eat them.

thanks Tina, I definitely plan to do that. I'm thinking I will freeze them directly after shaping so that when they defrost they will have one rise to do before baking. I'm very comfortable with that plan.
