Fresh nutmeg
« on: Jan 31, 2013, 03:01:19 PM »
Since I've been laid up I've been watching lots of cooking shows and it seems everyone is using fresh nutmeg so I ran my stubby self to the store today and bought a jar of fresh nutmeg (is it seeds or root or what?) and have no idea what I'm going to do with it.

Do you guys cook with nutmeg?

It is a seed. And you need to grind it somehow. Like a grinder for peppercorns. I love nutmeg but I have not used enough to dedicate a grinder to it.

A rasp is what Elton uses.  I have one of the minature graders that has a spot to hold the nutmeg seed in it.  I think it is so cool.  And yes when I cook I do use nutmeg but most of it goes in the eggnog.

Does Johnny drink eggnog with the nutmeg on top?
Nutmeg is good with any fruit dishes, any spiced bakery items, And with some meat dishes as well. Think like Swedish meatballs.

Johnny does not drink eggnog.  Johnny will not drink anything except Diet Coke, if it's impossible to get Diet Coke and he's parched to the point of pain unsweetened tea, and if I scream, lay on the floor and kick my feet he'll drink an ounce or 2 of water.

nutmeg goes in the pumpkin pie, the banana nut bread, the spice cake, and the bread stuffing.  Sorry it took so long to get back on this one.

I'll come eat at your house duh.  Sounds good.  I've been putting a little bit on scrambled eggs.  One day I put too much and it wasn't good at all.

i put nutmeg in my apple crisp.  one day i was doubling the recipe, and double the nutmeg along with everything else.  not a good idea.  when it says 1/8 or 1/4 tsp, that is all you need.

Yes it is very strong.  I'm not sure I would like it in eggs but definitely on a custard.  I believe that it is one of the spices that can cause illness if used in excess.
