Chinese Chicken

More ephemera.

2 cups cooked chicken, cubed
1 cup celery, diced
1 cup rice, cooked
3/4 cup mayonnaise
1 cup fresh mushrooms, sliced
1 teaspoon onion chipped
1 teaspoon lemon juice
1 teaspoon salt
10 3/4 oz condensed chicken soup
4 oz water chestnuts, drained and slivered
1/2 cup butter
1/2 cup slivered almonds
1 cup corn flakes

Preheat oven to 350 degrees Fahrenheit.
Mix all ingredients together except butter, almonds and cornflakes.
Put in 2 quart casserole.
Melt butter, add almonds and corn flakes.  Sprinkle on top of casserole.  Bake 35 minutes.
Serves 6 to 8 Great Pot Luck Dish.

I have made this with potato chips instead of cornflakes. And some crushed chips mixed in. I don't do cream of much of anything but whipping up my own is easy. And we called it hot chicken salad. Good stuff.

Those are good alternatives.  My doc watches my blood pressure closely so I stay away from salty food most of the time.  But occassionally I get the craving and the changes would be great for that.  I have a dry cream sauce that I make up as christmas presents for those that would appreciate it.  I was alittle concerned to see cream sauce and lemon juice.  Not to flavors that I put together in my mind well.  Anyway I'm very glad you liked it.

Cream of Chicken Soup is now either decreased sodium or 98% fat free and I don't like it for cooking like I do the old kind.  It's not as thick.  I used to could find Original Cream of Chicken Soup but I've looked at both the grocery stores in town and they don't have original anymore.

Water chestnuts make anything better.  Yum.

Well I'm suppose to be on a low fat diet so I like to choose where I'm going to put those 50 units of fat lol.  Usually they go directly to my tummy. 

I agree about the water chestnuts yum.
