Homemade Frozen Dinner
« on: Jan 15, 2014, 10:49:49 AM »
:542:  I bought a book called make your own groceries. I'm combining it with the Escoffier cookbook.  So far I'm working on a perfect baked mac and cheese.  The Escoffier mentioned adding nutmeg to the white sauce and I really like that.  I'm not going to use a veal stock though.  One I've never seen it in stores and am sure it would be very expensive on line.  The recipe called for guyere and Parmesan.  I was thinking more Cheddar and maybe an American white for melting.  What do you all think?

I think anything that you make at home will be healthier than what is available ready made in the grocery stores right now, Tammy. Go for it.

I've never seen veal stock either but I've never looked.  I like Parmesan but think it would give mac and cheese a totally different taste.

Well wish me luck I'm off to the grocery store when I leave the library.  This time I'll make it there.

I had a dehydrated jack cheese and a velveta that I used.  It was a bit to flavorful for me.  But ok if I add sour cream.

Yes it is.  The pepper steak worked really well as a frozen dinner.  I had one for lunch.

These are such wise words of wisdom.

Not really a recipe it's just stew meat cooked with onion and sweet pepper pieces in low sodium soysauce and ginger to taste thickened with alittle corn starch.  Then poured over cooked rice.
