Chocolate cake using Swans Down Cake Flour

3/4 c. dark cocoa or 3 oz unsweetened chocolate, melted (I used the dark cocoa - guess you could use regular cocoa)
3/4 stick unsalted butter
2-1/4 cups light brown sugar
3 eggs
1-1/2 tsp vanilla extract
2 tbs baking soda
1/2 tsp salt
2-1/4 c. Swans Down Cake Flour
1 cup milk
1 cup boiling water

Preheat oven to 350°
prepare 2 layer pans

Cream butter, brown sugar, and eggs - beat until light and fluffy
Add milk, vanilla and cocoa - beat in
add baking soda, salt - beat in
Slowing add flour - beat until smooth

Pour in boiling water

Stir with spoon until blended.


The batter was thinner than a mix cake which surprised me but it cooked up fine.

Cook about 35 minutes.

It's cook.  Just like that loaf cake I did at Christmas this calls for brown sugar, which I don't much like, but it doesn't taste like brown sugar when cooked.
