Souffle... experiences and sides?

Has anyone ever had a good cheese souffle before? I was thinking of trying my hand at it this weekend. What the heck do you serve with it? Salad (Sheri's buttercrunch lettuce has been driving me nuts)? Bread? Asparagus? I just have no idea!

Sarah, this butter crunch lettuce is the best tasting lettuce. One time I actually found seeds at Lowe's and planted it in my pretend green house. I haven't been able to find it since then though.
I've never made a souffle either but I think you can serve whatever you want along side it. Asparagus sounds good to me.

I think asparagus sounds good too - I'm on a high-protein, veggie kick here recently, and asparagus with some olive oil and salt, all sauteed up sounds might tasty. Might as well get some good nutrition in while I'm craving it.

I wish I had seen this earlier. I hope it worked out for you. Think of the cheese souffle as a bread and cheese course. It is a side dish and will go with any meat other than fish. With a fresh salad for your veggies. It is going to be rich so knock down the side of your other dishes.

I actually haven't made it yet - someone, I won't say who (glares at Adam) didn't pick up the cheese needed for it. I will try it THIS Sunday.

I was going with asparagus but then... I ate it... and made my family eat it too on Tuesday. I served it tonight with a mandarin salad. I love mandarin salads...

Rachael and I both thought it was pretty darn good. I wound up having to stop Rachael because she would have eaten it all!! Lindsay was in a bad mood. She sat at the table and whined about how she didn't like the new kind of cheese. And she doesn't like red lettuce. And she doesn't like mandarin oranges. And she doesn't like sugared walnuts. And her water was too cold. I could go on but I think you get the point. Her opinion is unreliable. Adam also liked it quite a bit but he was at college, so he had to eat his cold and flat.
I have to say - it was FUN making it. I really do enjoy cooking, especially when it's real cooking - not just one-pot dinners.
