For the purposes of this list I'm going to list perenials...and I should warn folks that I lean heavily towards cottage gardens.
Tall:

Medium:

Peppermint ( Mint is very invasive...take action to prevent spread)

etc.
Sarah, I've seen your Sunflowers. It's probably a good thing that Mike works for the fire department, cuz they're so tall you'll need to borrow their ladder truck to take pics of the blossoms!
I guess my point is that what some people might consider "tall", others may think of as "medium"!

My sunflowers? Tall?
I'm thinking more along the lines of arrangement in beds...tall in the back, medium iin the mid section, short in the front.
Tall can be anywhere from 2' to 5', depending on growing conditions. My plants tend to get taller than "normal" because I heavily amend my beds with compost.
Medium would be from 1' to 2'....
Short would be plants suitable for the front edge of the beds...

You have such beautiful gardens, Sarah, that I don't think you have to warn anyone about anything.
I'd be tickled if I could get my gardens looking half as pretty as yours.
This is a good topic and will really help me out. I have a tendencey of planting before I research and sometimes end up with the tall plants in front of the shorter ones...

under tall I can add: Chinese lanterns, Worm Wood, Blackberry Lillies
Under medium I can add: Bell Flowers, Columbine, Freesia, crocuses, tulips, daffodils, Allium 'Sparklers', horseradish, Mums,
Under short I can add: Portulaca, Oregano, Sage, Pineapple Mint, Peppermint, Chocolate Mint, Sweet Woodruff, Lilly of the Valley, Hosta before they bloom lol.
I love these kinds of lists. The question is are we going to be able to talk Jim into making fact sheets out of them after we get a bunch of them so they are easy to find and user friendly hehehe. (I'm such a pain).
