Topic: Favorite Fish Dishes

For me there is nothing better than a Pink Salmon Steak.

All I do is bread it and pop it in the oven.  Served with tartar sauce and lemon juice it is the perfect entree.  It doesn't smell or taste fishy.

I don't bread it I soak it in soy lemon honey and let it sit for a good few hours and cover it with fresh ground pepper and grill it up ... ohhh sooo yummy even better smoked!!

Sorry, Duh & Rita, I love fish, but I don't like the taste of Salmon.    Actually, two of my favorite fish dishes are Fried Catfish and Talapia.  I love the Talapia either breaded in Golden Dip then fried, or baked with a lemon butter sauce.  When I have fish, I want to be able taste the fish and don't use any Tartar sauce.

I don't use tarter either.. also swardfish with a mayonaise and dill sauce.. Great!!

Also lemon pepper trout..

Patti what does talapia taste like (a simalar flavor)? I see it in the market all the time..

Actually, Rita, I've never had swordfish, so I don't know if I would like it.    Trout is good and so is Bass, especially if it's fresh caught.  I'm lucky enough to have a neighbor who likes to go fishing and sometimes when he catches some bass he will give me one or two.   

Rita, Talipa is very mild and tastes pretty much like Bluegill.  There is a little restaurant here in town that offers a Bluegill sandwich and since I love Bluegill, I used to go there all the time to get one.  Well, I got to know the cook and he told me it was actually Talapia that they used and breaded it with the Golden Dip breading, so I was able to make it at home.

Swardfish is good as long as it is fresh.. it has a steak texture to it and not alot of fishy taste..

I am going to try the talapia.. Is the golden dip like a cornmeal??

No, it's really not like cornmeal texture.  It's a much lighter and finer texture and it's lightly seasoned.  It's put out by McCormick and it's actually spelled Golden Dipt.  It's in a blue box and I get the one that says Fish Fry.  I think you will like it.  Here I usually find it by the fresh fish.  I dip the Talapia in beaten egg and then the mix.  You could probably just use water, but I think the egg hold the mix on better.

I absolutely love my salmon patties, but I can't stand making them. I pick out all the little bones and pull off the skin before I even patty the salmon up. My mother used to leave the bones in for the extra calcium. She said it is good for you, but I don't cook like Momma...

I, also, love little, bitty fried catfish. When they get too big, they seem to have a muddy taste to me. I like most freshwater fish, except for bass. It has too strong of a taste for me...

Fried flounder and ocean perch are my picks out of the ocean. I do not like lobster at all. The one time I tasted it, I could barely finish eating what I ordered. It made me sick to my stomach. Yuk! I don't think I will ever aquire a taste for it...

Most places don't cook lobster or crab correctly.  I have the same problem with getting it from a resturant.  They cook it until it feels like rubber, ugh. 

And of course if you decide to do it yourself you have to listen to it scream.  Definitely not worth it.

Dianna, you'e not going to believe this, but the muddy taste is what I love most about catfish.    However, I don't like them too large either because I don't think they are as tender when they're big.

Oh, I dearly love Lobster and would eat it much more often if I could afford it,  which I can't!   

And of course if you decide to do it yourself you have to listen to it scream.

No way, Rita!  There is no way I could ever do that either.  I know that would kill my appetite for lobster for sure.

Our corporate office is in Maine and we have a Maine based trucking company that is based out of one of our offices.  Last year for Christmas, I got a call to stop by the plant (I was on vacation) as soon as possible.  When I got there, the trucking company had brought a cooler with 4 lobsters packed on dry ice.  The cooler had my name on it and said Merry Christmas.  Aunt Bonnie and I cooked em and they were delicious.  One died before we could cook it so we just broke off the claws and the tail and threw out the rest. 

Like Dianna, I love the little cat fish too.  Haven't found a good restaurant around here that serves them up in baskets and they keep bringing them until you are full.  My favorite place that does that is on Center Hill Lake in Tennessee.

What a very nice and delicious Christmas present that was for you, Jim!    Geesh, I wouldn't mind getting a present like that anytime.   Of course, I would need a lot of melted butter for the lobster, because it's gotta have butter, I sure don't want any of those substitutes.

Yep, sure was.  They brought down a cooler like that for about 8 managers in the plant. 

I'm with you on the melted butter.  I have to have that with my lobster too.

I remember many years ago when "Red Lobster" first opened a restaurant here in town, I was so excited  and couldn't wait to go there.  Oh my goss, what a BIG disappointment!    I ordered the lobster tail and broiled shrimp and found they didn't give you butter with it.    I've never been back there!!!
