Author Topic: Zesty Salsa for canning.  (Read 369 times)

10  cups roughly chopped tomato's
5  cups chopped and seeded bell pepper's
5  cups chopped onion's
2 1/2  cups jalapeno peppers, chopped, seeded
1 1/4  cups cider vinegar
3  garlic cloves, minced
2  tablespoons cilantro, minced
3  teaspoons salt
1 (6  ounce) can tomato paste

Combine all ingredients except tomato paste in large sauce pot.
Simmer until desired thickness.
Stir in tomato paste.
Ladle hot salsa into hot jars leaving 1/4 inch head-space.
Process 15 minutes in a hot water bath.
Note: use more hot peppers for a very hot salsa or less for mild.
It depends on how hot your peppers are and how hot you like your salsa.
I never get close to 2 1/2 cups for our mild salsa.

This sounds really good, Rita!! My brother makes his own salsa, too and it is delicious! Yours recipe looks like it is the same as his and we can go through about a quart a week Blush

close, but not my prize winning recipe..One word of warning tho, And I did this too. had to add more tomatoes...and I eat peppers raw.
THINK, about the 2 1/2 cups of chopped hot peppers, and If you are using Devils tongue, Red Carribean, or orange Habanero's...you might want to adjust the amounts...or get sum asbestos butt wipe!
