Title: What's for Dinner...#45

I'm going to resurrect this group of threads.  I think it is fun to know.

For me today I'm doing a pot roast with the little white potatoes, baby carrot, onions in a mixture of chicken broth, beef broth, and dry onion soup.  This should last me a few days which is good.

Glad you did.  I like knowing too because sometimes I think "I'd like to have that."

That sounds good duh.  I like left over roast better than freshly cooked.

Tonight we're having ham, already cooked but I'll put in a hot pan and fry (without oil) for a few minutes, potatoes with squash, green beans.

potatoes with squash... is there a recipe?  That sounds interesting.  I'm having the roasted corn and black bean salad with the roast beef just so I get enough fiber.  I'm light on food today. 

For some reason I over eat one day and under eat on the next.  The dietician wants me to even it out.  I'm trying but I haven't been one hundred percent successful yet.

Well i had subway roast beef sandwich this afternoon so i may do a turkey tureen for dinner from stouffer's.  I'll add the roasted corn and black bean salad to it along with a quarter of a cantaloupe.

We had leftover ham, squash and potatoes, and deviled eggs.

I chunked up squash and potatoes, put them in a pot of jut enough to cover them boiling water, cook until fork tender, add butter, salt and pepper.  My mother adds onions to hers.  We love it.

stouffer's tonight something with chicken and noodles.  It was good but then i wasn't paying much attention.  Tomorrow is the test so I have to stop eating at midnight.  I guess that means it's time to snack while i can.

last night I treated myself and Sharon to dinner at Denny's I had the steak salad and potato soup with extra bacon.  And sharon had a breakfast item.  We had a good day for the most part.  Although she was stuck with me when my neck went and I just say owwwwwww over and over.  i'm not a silent sufferer.

duh, I only cook the squash and potatoes in the summer and use the straight neck squash from the garden.

Last night we had crock pot roast with potatoes and carrots and slaw.

Tonight we ate at Quincy's.  I had salad, chicken livers and pasta salad.

Since it heated up I've been making cold food for the most part. Hummus and bean dips. Salads and such. Things that go down well and in little bits. I bought crackers and bagels and stuff like that. I have precooked bacon to make into sandwiches. I think we will live.

I had quite a bit of time to know that summer is coming. It helps that I pick up a can or two of beans when there's a special on them. And have a variety of salad fixings in house most of the time. And I keep herbs and spices all of the time.

It is a 'fend for yourself' night. Chip brought home shrimp and he's the only one that eats it. And Chloe and I just finished eating leftovers from last night not too long ago, so we aren't hungry. So Krys just needs to find something for herself. Chloe will eat again before bed, but not a full dinner I'm sure.

I made a balsamic marinade for chicken breasts.  I didn't have any thyme so use marjoram instead.  We'll see how it turns out.  It is another sparkpeople recipe.  It came in my e-mail today when I had taken chicken out to thaw without a plan yesterday, so I'm hoping for serendipity.  I'll have it with green beans.

The balsamic chicken was just food as well.  Their rating system is much more forgiving than I am.  That's going to make finding recipes a real pain.  Now I have 3 more of the chicken breast to eat.

I usually just leave them in the fridge and eat them over the next few days.  I don't mind eating the same thing day in and out.  I'd have done fine in the desert with the manna as long as it wasn't hot.

I'm so into snacking my way through the day. I don't feel like anything approaching a meal. So I am keeping plenty of fruits and veggies around for grab-and-go. I have different bean dips and and humus. And salads to either eat plain or on sandwiches.

They were frozen. Just bake them in the oven for about 20 min.

Well we ended up calling 911 and me going to the hospital via ambulance.  I had some type of asthma attack, which has happened before but has always improved over a few minutes after using an inhaler, but this one got worse instead of better.  I had a breathing treatment in the ambulance, took off the mask, and in a matter of seconds had another attack.  I ended up having a total of 5 breathing treatments and a dose of IV solumedrol before it got under control.  I was in the ER around 3 hours, came home, went to bed, only to wake up to it happening again but the inhaler helped this time so I didn't go back.  I work in a building that's riddled with mold so I think this is what has caused this mess and I'm going to have to quit my little job.  I'll never find such a cushy job again.

sheri can you get workman's comp?  It is work related if the conditions there are unsafe which mold is. 

Barb yum, wish I'd been at your house.  That dinner sounds wonderful.

Tina I never would have thought of that combination.  I like the taste of peas but never had them growing up so I forget about them. 

I had a tv dinner because I wasn't up to cooking after a large appetizer of buffalo nachos.  Talk about off of my diet.

duh, I put peas in everything.  I just ate an egg with peas cooked in it.  Love them.  I put them in salads too.

Not sure what's for dinner.  I got potatoes and squash out of the garden but don't think I want to cook them together.  Maybe potato salad and squash in the oven.

Once my kids discovered fresh shelled peas straight from the garden they never turned up their noses at them again.
I'm thinking I'll have another BLT for dinner. One at lunch didn't cure my craving.

Tina, once in a while I get on a tuna salad roll and eat it every day for several days.  I know you try to eat healthy but I like it on squishy white bread. Yum.

Yesterday we had hamburgers with home grown tomatoes, slaw, cucumbers.  Good ole 4th of July dinner.

Tonight I'm going to fry up some fresh cut okra, boil some just dug up potatoes, and have a green salad with fresh off the vine tomatoes.  I hate the heat but I love the summer vegetables.

i made liver and onions and when Sharon came over I shared with her.  Normally we go out to lunch but the budget is to tight for that.  The liver and onions turned out ok.  Sharon said it needed more salt.  my food always needs more salt because I don't like salt.

I am still having a lot of salads and finger foods. Fruits and things fill in the empty corners. It will probably remain that way through the summer. With a little pasta thrown in when I can't stand it any more.

I thought mac&cheese appealed to all palates :)

I've been eating mostly tomatoes, cucumbers, and squash from the garden.  The potatoes are almost gone.  I'll probably use them all tomorrow since Ginger is coming.

I baked the chicken this morning.  No more waiting until the heat of the day to decide to cook.  It came out great.  I almost forgot about it.  I took a nap but the timer woke me up.  That was a very good thing.

Boxed mac & cheese. Velveta brand is ok - edible. Kraft is too salty. She doesn't make it from scratch.

I see a ham and a roast in the fridge. Don't know which she's planning to make, if either. Don't know they'd be thawed in time for dinner. And I would think if it was the roast, it'd be in the crock already.  lol

is that a good thing or a bad thing?  I have an electric roaster so I can set the temperature but I'm not real sure how a real crock works.

Not a bad thing. The longer it cooks the more it falls apart. lol It was good, with taters and onions and carrots. We ended up eating about 7.

Sounds yummy and I know I like to eat later when it is hot so the hottest part of the day is passed. 

Today it is tv dinner because I'm to tired to do anything else.  I had mac and cheese for lunch.  It was the last of it.  Or I might do the last of the baked chicken and pot roast veggies.
