Yellow Squash Recipes!

I always wind up giving the food bank a ton of yellow squash 'cause I don't know of any good ways to prepare it except to soak it in italian dressing and grill it.  :unsure: Does anyone have any good recipes?   :help:  I'm desperate!!

I love it steamed but...

My favorite for it is in an italian sausage dish.  I searched all over for where it was posted here but could not find it.  I did find it at my blog so here is the link.

Slice the squash into thin little "rounds" and put them in ice cold water. Take a slice, roll it in corn meal mix with a little salt and pepper and then throw it in hot oil. Fry until crispy looking.:542: Mmm...mmm...good! :licklips:

I've never even heard of that!  It does sound good though.  I've got 3 good sized ones sitting on the counter, I think we'll try that tomorrow since I have all the ingredients on hand!  This still counts as a healthy vegetable, right??   :giggle:

I cut my squash length ways It's easier to cook ,bigger pieces not as much to turn over. I throw in in a bag with a corn meal and flour mixture, salt and pepper, yummy.

It's also good diced and sauteed with onions.

I fry my squash without using flour or corn meal.  I slice it thin, like Dianna said, and put oil in the pan and let it get hot.  I  dice up a little onion and then lay the squash in the hot oil with the diced onion on top.  I let it cook completely before I turn it so it keeps it shape.  We love it.

My daughter slices hers long ways then broils it in the oven with a little olive oil and salt and pepper on it.  She puts foil in a broiler pan and sprinkles a little oil on it then puts a tad on the top or either brushes a little on the top .  Not too much oil.  It browns up nicely that way.

Oh that reminds me, another way we used to have squash is to quarter and slice it so that the pieces are fairly small.  Then fry up some onions and garlic, add in some mild peppers or bell peppers, then the squash and corn.  It is called calabasitas.

What about freezing some Sarah, or put some in paper bags and store them in a cool dark place, they keep for quite awhile that way.

I like to take some of the bigger ones, slice them lengthwise thin, like lasagna noodles, sweat them with salt for a few hours and then use them in place of noodles in lasagna. Works well, as long as you give them time to sweat out the extra water.

We have a friend at church that likes the big ones.  The bigger they get the tougher they get I think but she likes them really big.  She says they boil up better.
