I'm really trying to improve my eating routine. I still have a hard time facing food first thing in the morning but I'm working on it.
The next thing is to see how I can make recipes I like a little more healthy.
This blueberry muffin recipe I plan to use splenda instead of sugar. Do you see anything else I might change? Could I replace some of the flour with whole wheat. I understand replacing all of it will create a very crumbly texture. But maybe 1/2 cup of the total could be whole wheat? What kind of oil would you suggest? One of the suggestions in the book is coconut oil.
2 cups all purpose flour
1/2 cup sugar replaced with splenda
1 T baking powder
1/2 t salt
3/4 cup milk I'm going to use the low-fat 2% vitamin a and d enriched.
1/3 cup vegetable oil
1 large egg (can I replace this with an egg substitute?)
1 cup blueberries lightly coated in flour
1 t lemon or orange zest
Preheat oven to 400 degrees F. line 12 cup muffin pan with paper baking cups.
In a large bowl combine the flour, sugar, baking powder, and salt, set aside. Whisk together the milk, oil, and egg. Add the dry ingredients all at once, whisking with a fork just until moist. Stir in the fruit and zest.
Spoon batter into muffin cups until 2/3 full.
Bake for 15 to 20 minutes. Let cool for a minute or two before pulling them out of the pan so they can set. Serve warm or at room temperature.
